This decaf coffee featuring white sugar, dried dates and caramel notes is grown in the mountains near the ancient Zapotec ruins of Monte Albán.

The coffee is grown by certified organic farmers who rely on traditional farming techniques, avoiding chemicals and creating their own organic compost. By refining their harvesting practices to focus on optimal ripeness and extending fermentation times from 8 to 24–40 hours (adjusted for weather and fermentation medium), they achieve a fruitier, more complex coffee profile.

This specialty coffee company is a social enterprise who believes coffee can help reduce reoffending in the UK. Starting with a small roastery inside HMYOI Aylesbury, they’ve now expanded to a commercial-scale operation in HMP The Mount, a Category C men’s prison. Here, they employ up to five prison residents at a time, providing hands-on training in coffee roasting, production, and logistics.

In their roastery inside HMP The Mount, they do more than just roast coffee—they employ up to five prison residents, teaching them valuable skills in roasting, production, and logistics. This hands-on experience builds confidence and self-esteem, while their pay, which is above the standard prison rate, includes a portion set aside for release. This gives them a financial boost to support their reintegration into society.
